Shari’s Mom’s Mouthwatering “Sour Cream” Chocolate Chip Coffee Cake
(trust us…. it’s amazing!!)

Ingredients:
1-1/4 C. #239 Organic Fair-Trade Sugar
1 C. Earth Balance or other vegan margarine
Equivalent of 3 eggs #231 Ener-G Egg Replacer
1 tsp. vanilla
1 C. #567 Tofutti Better Than Sour Cream
1-3/4 C. Unbleached all-purpose flour
1 tsp. Baking soda
1 tsp. Baking powder
½ tsp. Cinnamon
½ C. Chopped walnuts
2 C. #252 Sunspire Dark Chocolate Chips


Preheat oven to 325 degrees.

Cream 1 C. margarine with 1 C. of the sugar.

Add Egg Replacer (equivalent of 3 eggs), 1 tsp. vanilla, and 1 C. Toffuti Sour Cream and beat.

Add 1-3/4 C. flour, 1 tsp. baking soda, and 1 tsp. baking powder and mix.

Mix together the ingredients for the topping: ½ tsp. cinnamon, the remaining ¼ C. sugar, ½ C. chopped walnuts, and 2 C. chocolate chips.

Pour half the batter into a bundt pan (large loaf pan will work, too), and sprinkle ½ of the topping mixture over the top. Then layer the other half of the batter and the other half of the topping.

Bake at 325 F for 1 hour.
